Ingredients for the fried chicken:

About 350 g chicken thigh

2 teaspoons mayonnaise

2 teaspoons soy sauce

2 teaspoons sake

1/2 piece of ginger (grated)

1/2 clove garlic (grated)

2 tablespoons potato starch

1 tablespoon water

1/2 cup flour

Preparation
Prepare the chicken:
Cut the chicken into 4 to 5 cm pieces to keep it juicy, and smaller pieces to enjoy the crispy batter. Sprinkle with salt and pepper.
Rub the chicken with mayonnaise.
Place the chicken in a plastic bag and let it marinate for about 2 hours.
(Mayonnaise helps coat the chicken with oil, keeping it juicy without drying out.)
Prepare the batter:
In a bowl, mix the potato starch with enough water to form a batter. Add the flour and mix quickly.
(Potato starch crisps up when fried, and the flour helps the batter stick better to the chicken.)
Coat the chicken:
Drain the chicken well and coat it with the batter just before frying.
(Do not coat the chicken too early to keep it crispy.)
Fry the chicken:
Heat oil in a pan to 170°C (medium heat). Fry the chicken pieces without overcrowding to prevent sticking.
After 3 minutes, turn the chicken and fry for another 2 minutes until golden.
Finish at high heat for 1 minute for a perfect crisp.
Place the fried chicken on a rack to drain excess oil.
Assemble the Donburi:
Serve warm rice in a bowl, add the crispy fried chicken on top, and garnish with a little lemon and parsley (in small amounts) for the finishing touch.
