Vegetable Chifteluțe (Romanian vegetable patties)
Ingredients (for about 20 patties):

2 medium potatoes, cooked and mashed

1 grated carrot

1 grated zucchini (well drained)

1 medium onion finely chopped

2 cloves garlic, crushed

3 tablespoons flour (or breadcrumbs)

1 egg
-
Fresh chopped parsley
-
Salt, pepper, sweet paprika (to taste)

Oil for frying
Preparation:
In a large bowl, mix the mashed potatoes, carrot, zucchini, onion, garlic, and parsley.
Add the egg, flour, salt, pepper, and paprika. Mix well until you get a homogeneous dough. If too wet, add a bit more flour or breadcrumbs.
Shape small patties or balls with your hands.
Heat oil in a pan and cook the chifteluțe over medium heat until golden brown on both sides (about 3-4 minutes per side). Drain on paper towels.
Serving:
Serve hot with a fresh salad, garlic yogurt sauce, or tomato sauce.
