Recipe for Salmon Poke Bowl
(Serves 2)
Ingredients:

200 to 250 g of fresh raw salmon (preferably sashimi-grade, cut into 1 to 2 cm cubes)
-
200 g of sushi rice (or cooled white basmati or jasmine rice)
-
1 avocado (diced)
-
1/2 cucumber (thinly sliced)
-
1/2 red onion (finely sliced)
-
1/2 cup of sesame seeds (mixed black and white if possible)
-
2 to 3 sheets of nori seaweed (cut into thin strips)
-
1/2 cup of edamame (young soybeans, pre-cooked and shelled)
-
4 to 5 radishes (thinly sliced)
-
1/2 mango (optional, diced, for a fruity touch)

2 tbsp of Hawaiian Poke sauce (see the recipe in the sauces section)

If you like a spicier sauce, you can add a bit of Sriracha for some heat.
Preparation Instructions:

Prepare the rice:

Rinse the sushi rice under cold water until the water runs clear.

Cook the rice according to the package instructions and allow it to cool to room temperature. You can also add a spoonful of sweetened rice vinegar to the cooled rice for extra flavor (optional).

Prepare the salmon:

Cut the fresh salmon into evenly sized cubes (1 to 2 cm). For safety, ensure the salmon is sashimi-grade if you are consuming it raw.

Prepare the vegetables and fruits:

Cut the avocado in half, remove the pit, and then dice the flesh.

Thinly slice the cucumber, radishes, and red onion.

If using the mango, peel it and cut it into cubes.

Cook the edamame (if frozen) according to the package instructions, then drain and allow it to cool.

Assemble the poke bowl:

In two bowls, create a base layer of cooled rice.

Place the salmon cubes in the center of each bowl on top of the rice.

Arrange the diced avocado, cucumber, red onion, radishes, mango (if using), and edamame around the salmon.

Add the garnishes:

Sprinkle sesame seeds on top and add strips of nori seaweed for a marine flavor.

Season with the sauce:

Drizzle about 1 to 2 tablespoons of the Hawaiian Poke sauce over the salmon and around the vegetables/fruits.

Serve immediately and enjoy!
Traditional Hawaiian Note:
In Hawaii, vegetables and fruits are not traditionally mixed into the poke. Each ingredient is served separately, allowing them to retain their freshness and distinct textures. The salmon is usually marinated separately in the sauce, while the vegetables and other garnishes are added without being mixed into the sauce.
