Our Tagliatelle Bolognese pays tribute to one of the greatest recipes of the Italian culinary heritage. This iconic dish is here prepared respecting the official recipe of Ragù alla Bolognese, as recognized by the Accademia Italiana della Cucina and the Chamber of Commerce of Bologna. This ragù, slowly simmered with care, reveals a complex flavor profile where tender meat, soffritto vegetables, wine, tomato, and a touch of milk combine harmoniously. It is a generous dish, both comforting and noble, embodying the soul of traditional Italian cuisine.

Tagliatelle: a demanding choice

To enhance this ragù, we have chosen artisanal tagliatelle with a high egg content, crafted according to traditional Italian methods.

La Pasta di Camerino – Organic Tagliatelle
These tagliatelle are made with 35% fresh eggs, about eight eggs per kilogram of semolina.
Bronze-drawn and slowly dried at low temperature, they offer a rough texture ideal for holding the sauce.
Ingredients: organic durum wheat semolina, organic fresh eggs (35%).
Origin: Marche region, Italy.

Bolognami – Tagliatelle Fresche all’Uovo
Handmade fresh pasta, soft and perfect to accompany ragù or a simple sugo.
Ingredients: durum wheat semolina, eggs, water.
Origin: Tuscany, Italy.

An artisanal process for an unmistakable taste

The pasta we use is made from fresh eggs and 100% Italian durum wheat semolina, then slowly dried at low temperature, just like the grandparents used to do. This artisanal process preserves the subtle aromas of the wheat while providing a firm, melting texture perfectly suited for rich sauces like ragù.
