Tinga de Pollo is a traditional dish from Mexico, originating in the state of Puebla. It consists of shredded chicken simmered in a sauce made from tomatoes, onions, and chipotle peppers. It is a simple, economical dish widely enjoyed in Mexican home cooking.

Tinga is often used as a filling for tostadas (crispy tortillas), tacos, empanadas, or even tamales.

Ingredients (for 4 to 6 people)

  • 2 cooked and shredded chicken breasts

  • 3 ripe tomatoes

  • 1 sliced onion

  • 2 cloves of garlic

  • 1 to 2 chipotle peppers in adobo sauce (to taste)

  • 1 tablespoon vegetable oil

  • ½ cup chicken broth

  • Salt and pepper to taste

Preparation

  1. Boil the tomatoes for a few minutes, then peel them.

  2. Blend the tomatoes with the garlic, chipotle peppers, and chicken broth until smooth.

  3. In a pan, sauté the onion in oil until tender.

  4. Add the shredded chicken and mix well.

  5. Pour the sauce into the pan, season with salt and pepper, then simmer over medium heat for 10 to 15 minutes until the sauce thickens slightly.

Serving
Serve hot on tostadas or in tacos, accompanied by sour cream, grated cheese, avocado, or salad according to preference.
