Homemade Lentil Patties (makes 2 patties)
Ingredients

150 g green or brown lentils

1 shallot, finely chopped

1 small garlic clove, crushed or finely chopped

1 tablespoon brown miso (optional but great for umami)

1 tablespoon tomato paste

50 g rolled oats (for binding)

Vegetable oil for cooking

Salt and pepper
Instructions

Cook the lentils
Rinse the lentils in cold water. Boil them in three times their volume of water. Simmer over medium heat for 20–25 minutes, until some lentils just start to split but most remain firm. Drain well. -
Prepare the mixture
Blend about 2/3 of the cooked lentils with the shallot, garlic, miso, tomato paste, salt, and pepper until smooth.
Mix this with the remaining lentils and oats in a bowl. Adjust the texture if needed (add more oats if it's too soft). -
Shape the patties
Moisten your hands and form 2 round patties, about 1.5 cm thick. -
Cook
Heat a generous amount of oil in a skillet over medium-high heat. Cook the patties for 4–5 minutes per side until golden and crispy outside.
