1 whole chicken cut into pieces

1 bay leaf

1 teaspoon ground cumin

½ cup water or chicken broth

Preparation
Heat the oil in a pot over medium heat. Add the onion, bell pepper, and garlic, then sauté until tender.
Add the chicken pieces and brown lightly on all sides.
Add the chopped tomatoes, bay leaf, cumin, salt, and pepper. Mix well.
Add the water or broth, cover, and let simmer over low heat for about 40 minutes until the chicken is tender and the sauce has reduced.
Check seasoning and adjust if needed.
Serve hot, garnished with fresh cilantro, accompanied by white rice or plantains.
