Authentic Burgundy Recipe (Red Wine Sauce)

Ingredients:

  • 50 g of mushroom peelings

  • 2 shallots, finely chopped

  • 25 cl of red wine (preferably Burgundy)

  • 1 tablespoon of butter

  • 1 tablespoon of flour

  • 1 root of parsley

  • Thyme and bay leaves

  • Salt and pepper to taste

  • A pinch of cayenne pepper

Preparation Steps:

  1. Moisten with wine:
    Take all the ingredients and add the red wine.

  2. Reduce by half:
    Let it simmer on medium-low heat until the liquid reduces by half.

  3. Strain:
    Pass the sauce through a strainer to remove the solids.

  4. Thicken with beurre manié:
    In a small bowl, mix 1 tablespoon of butter and 1 tablespoon of flour to make a beurre manié. Add this mixture to the strained sauce and heat on low, whisking to thicken the sauce.

  5. Add the pinch of cayenne:
    Add a pinch of cayenne pepper to give the sauce a slight kick.

  6. Finish with butter:
    At the end of cooking, add one last knob of butter and whisk to make the sauce even smoother and shinier.

Serving:

The sauce is now ready! You can pour it over your favorite meat, like a steak, tournedos, or any other meat of your choice. Enjoy!
