Ti-Malice Sauce Recipe

Ingredients:

  • 4 to 6 hot peppers (bird’s eye chilies or Caribbean peppers)

  • 3 garlic cloves

  • 1 small onion or 2 green onions (scallions)

  • 1 teaspoon white vinegar (or apple cider vinegar)

  • 1 tablespoon oil (neutral oil like sunflower or canola)

  • A pinch of salt

  • Juice of ½ lime (optional)

  • A small piece of fresh ginger (optional)


Instructions:

  1. Wash the peppers and remove the stems. (For a milder sauce, you can remove the seeds.)

  2. Peel the garlic, onion, and ginger if using.

  3. Blend or finely chop all the ingredients: peppers, garlic, onion, ginger.

  4. Add the vinegar, oil, salt, and lime juice.

  5. Mix well and adjust seasoning to taste.

  6. Pour the sauce into a clean small jar and keep it refrigerated. It can be stored for several weeks.


This sauce is very spicy, so start with fewer peppers if you’re not used to heat, and adjust to your preference. It’s perfect for enhancing meats, fish, grilled dishes, or simply for dipping bread.
