Shoyu Tare (しょうゆタレ) — Soy Sauce
Naturally fermented soy sauce with a deep umami and salty flavor, sometimes subtly sweetened. Our shoyu tare is made with organic ingredients and contains no artificial additives, offering a rich, authentic flavor profile. -
Miso Tare (味噌タレ) — Miso Paste
Made from carefully fermented organic miso paste, this tare provides a deep, umami-rich flavor that balances between sweetness and intensity depending on the type of miso used. A must-try for miso ramen lovers, true to Japanese tradition. -
Shio Tare (塩タレ) — Salt-Based
A light and pure base made with organic sea salt, sometimes combined with a delicate kombu- and fish-based dashi, offering a clear, subtle, and refined flavor — perfect for shio ramen. -
Karashi Tare (辛しタレ) — Spicy
A bold and spicy tare, made with organic chilies, artisanal chili oil, and chili paste. Balanced heat that enhances spicy ramen without overpowering other flavors.

Final Assembly

Cook the noodles:
Boil the fresh ramen noodles for 1–2 minutes, depending on package instructions. -
Prepare the bowl:
Add 1 to 2 tablespoons of tare to each bowl, then pour in about 300 ml of hot tonkotsu broth. -
Assemble:
Add the cooked noodles, then gently place the chashu slices, a halved marinated egg, a drizzle of garlic oil, and finally the fresh toppings.
