Ingredients:

120 ml (1/2 cup) apple cider vinegar

2 tbsp tamari (gluten-free)

1 tbsp maple syrup

1 tbsp brown sugar

1 clove garlic, finely chopped

1 small onion, finely chopped

1/4 tsp ground ginger
-
1/4 tsp ground mustard seeds
-
1/4 tsp ground black pepper

A pinch of smoked paprika

60 ml (1/4 cup) water

1 tsp tamarind juice (for a tangy and fruity touch)

1 tsp shiitake mushroom extract or a few drops of soaking liquid from dried shiitake mushrooms to boost the umami flavor
Preparation:

Gently sauté the chopped garlic and onion in a tiny bit of oil (or a little water for an oil-free version) for 2-3 minutes, until translucent and fragrant, without browning.

Add all the other ingredients to the saucepan.

Bring to a boil over medium heat, stirring well to dissolve the sugar.

Reduce to low heat and simmer for 5 to 10 minutes, until slightly reduced.

Remove from heat and let cool.

Strain to get a smooth texture.
