A substitute for the famous Worcestershire sauce, this 100% vegetarian recipe is designed to bring a rich and deep flavor to all your dishes, without any animal-derived ingredients.

Ingredients:

  • 120 ml (1/2 cup) apple cider vinegar

  • 2 tbsp tamari (gluten-free)

  • 1 tbsp maple syrup

  • 1 tbsp brown sugar

  • 1 clove garlic, finely chopped

  • 1 small onion, finely chopped

  • 1/4 tsp ground ginger

  • 1/4 tsp ground mustard seeds

  • 1/4 tsp ground black pepper

  • A pinch of smoked paprika

  • 60 ml (1/4 cup) water

  • 1 tsp tamarind juice (for a tangy and fruity touch)

  • 1 tsp shiitake mushroom extract or a few drops of soaking liquid from dried shiitake mushrooms to boost the umami flavor

Preparation:

  1. Gently sauté the chopped garlic and onion in a tiny bit of oil (or a little water for an oil-free version) for 2-3 minutes, until translucent and fragrant, without browning.

  2. Add all the other ingredients to the saucepan.

  3. Bring to a boil over medium heat, stirring well to dissolve the sugar.

  4. Reduce to low heat and simmer for 5 to 10 minutes, until slightly reduced.

  5. Remove from heat and let cool.

  6. Strain to get a smooth texture.

  7. Store in the refrigerator (keeps about 2 to 3 weeks).

Usage:

Use this sauce for:
