Traditional French Mayonnaise

Ingredients

  • 1 egg yolk

  • 1 teaspoon Dijon mustard

  • 200 ml neutral oil (sunflower or peanut oil)

  • 1 tablespoon white wine vinegar or lemon juice

  • Salt

  • Pepper

Preparation

  1. Put the egg yolk and mustard in a bowl.

  2. Lightly season with salt and pepper.

  3. Start whisking, adding the oil very slowly, drop by drop at first, to emulsify well.

  4. Once the mayonnaise starts to thicken, continue adding the oil in a thin stream while whisking vigorously until you get a firm, creamy texture.

  5. Add the vinegar or lemon juice, mix, and adjust seasoning to taste.

Tips

  • Use room temperature ingredients to help emulsification.

  • If the mayonnaise breaks, start a new emulsion with a fresh yolk and slowly incorporate the failed mixture.

  • Mustard helps stabilize the emulsion.
