  • 1 tablespoon rice vinegar (preferably Japanese, mild and light)

  • 1 teaspoon fresh lemon juice

  • 1/2 teaspoon white sugar (for subtle sweetness)

  • 1/2 teaspoon fine salt

Detailed Preparation:

  1. In a clean bowl, whisk the egg yolks until slightly foamy.

  2. Add sugar and salt, and keep whisking until dissolved.

  3. Add the rice vinegar and lemon juice, mix well.

  4. Slowly drizzle in the oil, starting drop by drop, whisking constantly and vigorously.

  5. As the mayonnaise thickens, pour the rest of the oil in a thin stream while continuing to whisk.

  6. Taste and adjust salt or sugar if needed.

  7. Chill for at least 30 minutes to allow flavors to develop.
