Detailed Preparation:

In a clean bowl, whisk the egg yolks until slightly foamy.

Add sugar and salt, and keep whisking until dissolved.

Add the rice vinegar and lemon juice, mix well.

Slowly drizzle in the oil, starting drop by drop, whisking constantly and vigorously.

As the mayonnaise thickens, pour the rest of the oil in a thin stream while continuing to whisk.
